Gluten Free Oatmeal Chocolate Chip Cookies
Oatmeal Chocolate Chip Cookies
1/3 cup Almond Butter
1/4 cup Ghee
2 Eggs
1 tsp Vanilla
1 tbsp Cinnamon
3/4 cup Coconut Sugar
1 cup Almond Flour
1/2 cup Gluten-Free Oats (I use Bob's Red Mill)
1/2 cup Enjoy Life dairy free chocolate chips
1 pinch of salt
1 tsp baking powder
Preheat the oven to 350 degrees
Cream together the almond butter, ghee, eggs, vanilla and coconut sugar
Once fully combined, add in the dry ingredients: cinnamon, baking powder, salt, and almond flour
Mix together and gently fold in the toppings (oats and chocolate chips)
On a cookie sheet lined with parchment paper, place the cookies a couple inches apart. For thinner cookies, flatten the dough with your finger tips
Bake for 8-10 minutes
