Chickpea Blondies

1 Can (15 oz) Chickpeas, rinsed & drained
1/2 Cup Almond Butter or Peanut Butter
1/3 Cup Maple Syrup
1/4 Cup Shredded Coconut
2 tsp Vanilla
1/2 tsp Salt
1/4 tsp Baking Powder
1/4 tsp Baking Soda
1/3 Cup Chocolate Chips

  1. Preheat the oven to 350 degrees

  2. Using baking spray or coconut oil, coat an 8x8 baking pan

  3. In a food processor, combine all ingredients besides chocolate chips and coconut

  4. Blend until the batter is smooth

  5. Fold in the chocolate chips and coconut

  6. Pour the batter evenly into the pan

  7. Bake for 20-25 minutes
